In Australia, chefs are not assessed for attitude; particularly indicators of character and fitness to be a professional chef.
A TechnicalChef is different.  TechnicalChefs are required to provide evidence of their “Attitude” (or Character and fitness).

They are required to submit three persons as professional referees who can that vouch for ethical behaviour, flexibility, reliability, self discipline, and temperament.

In addition, evidence of historical commitment  and personal development is considered.
2. Attitude Assessed by the independent opinion of three industry referees, which may be boosted by  evidence of participation in career or self-development.
