Do not confuse a Chef with a TechnicalChef. In Australia, chefs are not assessed for attitude; particularly indicators of character and fitness to be a professional chef.
A TechnicalChefis different. TechnicalChefs are required to provide evidence of their “Attitude” (or Character and fitness).
They are required to submit three persons as professional referees who can that vouch for ethical behaviour, flexibility, reliability, self discipline, and temperament.
In addition, evidence of historical commitment and personal development is considered.
Assessed by the independent opinion of three industry referees, which may be boosted by evidence of participation in career or self-development.
Rules and conditions – Attitude
Applicants will be required to provide three independent industry referees, to show character and fitness to be a member of the A.I.T.C, (defined by the Australian Institute of Technical Chefs as “Attitude”). Including being, courteous, enthusiastic, ethical, flexible, passionate, positive, reliable, trustworthy, self- disciplined and integrity.
Provided they fulfil all the other requirements, applicants who are unable to provide three referees will have the right to request a panel interview (There will be an additional cost to the applicant).
Applicants may appeal a decision based on references (Referees comments will not be identified. Only that applicants are rejected based on all the information of character and fitness).
Applicants who appeal, will need to appear before a panel committee at the next available opportunity as determined by A.I.T.C. There will be an additional cost to the applicant.
The institute reserves the right to approve character and fitness based on evidence of historical commitment to the industry.
The institute reserves the right to request evidence of involvement in career development activities which may include:
PARTICIPATION: – Culinary Excursions / Leadership, Professional or Personal Development Workshops / Industry Related Master classes / Industry Related Short Courses /Culinary Social Events. STUDIES: – Enrolled or Completed Culinary Related Studies: Certificate IV / Diploma / Degree / Other CULINARY COMPETITIONS: – Competitor in Culinary Competition / Accredited Culinary Judge (ACF) (Other) MEMBERSHIPS: – Member of: Australian Culinary Federation / Les Toques Blanches / Académie Culinaire de France/ Other Culinary Associations MEDIA: – Published articles / Author / Media reviews / Subscriptions to industry magazines / Member of online culinary groups / On social media E.G.; LinkedIn – Facebook GENERAL: – Assisted with charity events / Consultancy roles within Hospitality / Culinary Committees/ Advisory Groups OTHER: – Briefly describe participation in OTHER activities.

Does the applicant demonstrates integrity and respects towards others?
Do you believe the applicant is a good role model for the Commercial Cookery industry?
Does the applicant have and demonstrates a positive attitude towards continues self improvement?
Would you employ the applicant as a chef?
